I think monkfish would add little but expense, tbh - it's basically a peasant dish. Some months after I devised this I found that the Spanish actually have something very similar. But, hey, try it and see how it turns out.

I suspect those expensive beans cost a lot less in Spain, too.

And, of course, Spain is where most of our hake goes!

By the way, Young's do bags of frozen whitefish fillets which are actually Alaskan pollack - that's what I used.
