Raw diakon & carrot salad with fresh parsley!


Peel your daikon (mooli) which is a white radish and carrot and then shave it with a potato peeler so it's nice and thin into a bowl. I find deacon quite watery so I squeezed mine out in a dish cloth before adding it to my carrot. Sprinkle some fresh parsley. The dressing can simply be fresh squeezed lemon or cider vinegar. Amount this to personal taste but you only need a little. Alternatively, two to three TBS of cider vinegar and the same of maple syrup heated up in a pot and poured over the salad. You won't need salt but a bit of cracked pepper is nice. This is a great side dish and something different. Google Diakon for nutritional info!
